Chris Lyon takes over as Head Chef
Friday, January 20, 2012 at 4:56PM After two years at the helm of the kitchen at The Engineer and after getting us off to a flying start here, we are sad to see Oli move on to pastures new. However we are all very excited at the arrival of Christopher Lyon who has taken over the kitchen this week. Chris has worked at the Ledbury in Notting Hill, the fine dining operation of The Royal Festival Hall, for several private clients in Europe and at some of the best restaurants in his native Brisbane.
We’re finalising his menus this week ahead of a launch next Wednesday 25th January, but expect to see dishes such as 7-hour Moroccan lamb on toast; vodka citrus & mint cured salmon, potato blini, caper berry, radish & fennel salad; Pepper-crusted venison, carrot puree, potato & sage gallette, grilled leaks; Orange & star anise crème brulee.
We are also looking at our pantry products and will have some exciting new things gracing the shelves soon. Watch this space.
